Blueberry Cupcakes

I baked a batch of these blueberry cupcakes to satiate a craving for something of the criteria sweet but not chocolate, biscuit-y, or a beverage.

A good few chocolate McVities Digestives have been had of late, and my stash from the $1.85 Woolies special back in August has dwindled to a dangerous low. Praise be to the omnicient bargain gods, whose declaration that it is McVities replenishment time this weekend could not be clearer. Through their great power and mercy to the McVities-starved and -shortsupplied among us, the same special has been magicked into the current week’s Coles catalogue. Mere coincidence it cannot be.

I tried out my Wilton individual cupcake holders for the first time. They work well with the small size of the steam oven, which can’t fit usual cupcake trays.

Ingredients: 1 1/2 cup SR flour, 3/4 cup brown sugar, 1 cup frozen blueberries, 1/3 cup oil, 1/2 cup milk, 1 egg, vanilla essence, cinnamon

Mix all but the blueberries, stir those through at the end.

Taste verdict One bowl, one craving down.
