Pandan Chiffon Cake

This is my second-ever attempt at a pandan chiffon cake. The top half of the chiffon is almost there. The texture is fluffy, not fall-away crumbly, it’s definitely light – the lightest of any cake I’ve baked. The bottom half however didn’t rise. Density like that won’t fly in a chiffon cake.

I’m not sold on the pandan essence I used in the cake. It was a toss up between pandan flavouring or essence at the Lucky Chinese supermarket in Northbridge., I went with the essence. It hasn’t imparted an overly strong pandan flavour. There is also a slight acidic aftertaste – it’s not bad tasting but it is there.

Overall, I’m pretty happy with this attempt. 

My Braun MultiMix 3 Hand Mixer HM3135 from the Good Guys (via an OzBargain deal) got its first use whipping the egg whites to stiff peaks. With this 500W toy, beating was a breeze. The mixer also comes with dough hooks, a chopper attachment, and a blender attachment. Seeing how well it mixes, I’m itching to test these out. Absolute steal it was too: paid $39 all up with delivery, it retails for upwards of $100 usually, and it includes a seriously generous 2-year warranty.

Taste verdict A chiffon cake I’ll be attempting again.
